Mochis of Lemon Mousse
¡Te damos la receta! Preparamos Mochis de mousse de limón y te lo recomendamos seriamente ; )
-Ingredients: 250g of glutinous rice flour, 100g of sugar, 300ml of water, potato starch or cornstarch, 6g of green tea or matcha (optional) – For the mousse: juice of 1 lemon and scratch, 12g of gelatin powder, 150ml of milk, 2 eggs, 80g of sugar, 200ml of cream to assemble.
-Preparation:
-Preparation of the lemon mousse: mix the yolks with half the sugar, add the lemon juice and zest and the milk, heat the mixture in a bain-marie, always stirring, hydrate the gelatin powder with water and place the mixture, stir until it begins to thicken and allow to cool. Whip the cream without being too firm and add to the previous mixture. Beat the whites in the snow with the rest of the sugar and finally add the whites to the previous mixture, put in the fridge for at least three hours.
-Preparation of the dough: dilute the green tea in water for the dough, put the flour and sugar in a microwave bowl add the water and water with matcha little by little and mix well, cover the bowl with transparent film and cook 2 min in the microwave, mix the dough, heat 2 min more, mix, if the dough is translucent and bright it is ready but cook it 2 min more, sprinkle the dough with cornstarch and the work table, flatten the dough until it is thin and divide in 13 portions, place each portion on a small mold or boul with film underneath, place a mousse ball in each mochi mass portion, close the film and store in the refrigerator in the same mold for one or two hours, look the story that we will post on Instagram for more info.
